Study, Eat, Study: Baked Goat Cheese and Garlic Bread

You’re going to have plenty of long days studying for the LSAT. Cooking yourself something delicious is a good way to take a break and stay alive. This baked goat cheese is easy enough to take you only a few minutes to prepare and tasty enough to make your life better. Plus, the combination of goat-derived dairy with the acidity from the tomatoes has been shown to stimulate brain function, according to some studies that probably exist.

Prep Time: 4 minutes
Oven Time: 20-25 minutes (enough time to do two logic games while you wait!)
Serves: 3-4 (it’s great re-heated!)

Ingredients

Baked Goat Cheese
8oz goat cheese (any brand, but log is better than crumbles for this)
1 small jar of marinara sauce (about 2 cups)
1/4 cup fresh basil (optional), sliced (you can substitute dried basil or oregano or herbs de provence)

Garlic Bread
1 full-size baguette (whatever bread you’ve got lying around will work, but crusty bread like baguette will work best)
5-10 Garlic cloves
Butter (optional)

Instructions

Baked Goat Cheese
1. Preheat oven to 375
2. Get a small dish and squash the goat cheese until it fits the shape of the container, leaving an inch border for the sauce. Spoon in the marinara, making sure not to cover the goat cheese entirely. Salt the top to taste
3. Bake 20-25 minutes (you want to see it bubbling and maybe browning a bit).
4. Cover with basil or whatever herbs you’re using. Serve with the garlic bread:

Garlic Bread
1. Slice the bread into slices that you could eat in 1-4 bites and butter (or not) to your liking.
2. Place in the oven for the last 10 minutes or so with the goat cheese
3. Slice the garlic cloves in half and rub on the bread before dipping!

This comes off like a classy dish even though it’s basically just pizza. After writing this I’m now very hungry so I’m going to make this right now. I suggest you do the same!
